Lately I’ve become a bit obsessed with making cookies from cake mixes. First because they are just so easy and second they’re so delicious! My husband loves funfetti so I knew I wanted to try out some Christmas Funfetti Cookies this year. I’ve been trying to come up with some yummy cookie recipes to take to our Christmas celebrations this year, but with a baby I need easy and quick recipes.

Christmas for us involves a lot of travel. We have three weekends of travel coming up and I added it up that in K’s first 8 months of life, she will travel over 8,000 miles. Needless to say we spend a lot of time on the road or in the air. Since we travel, I don’t have to host for the holidays but I always want to contribute. Cookies are a great option for that. They’re easy to make ahead of time and travel well. This year I’m planning to make a cookie platter that includes these Christmas Funfetti Cookies and my Red Velvet Cookies.

Ingredients:
– Funfetti Cake Mix
– 1 small box Vanilla Pudding Mix
– 1/2 cup oil
– 3 eggs
– 1/4 cup green and red sprinkles

Thick, Chewy and Delicious are three words to describe these easy to make Christmas Funfetti Cookies. You'll want to add these to your Christmas cookie platter.

Directions:

  1. Mix cake mix, pudding mix, oil and eggs together in a large bowl
  2. Fold in the extra sprinkles
  3. Bake at 350 for 8-10 minutes or until golden brown around the edges
  4. Cool on the pan for about 2 minutes then move to a baking rack to finish cooling

These cookies were thick, chewy and delicious. I love the extra flavor that adding in the pudding mix gives the cookies. So tell me, what cookies go on your Christmas cookie platter?
